Late-disgorged’ refers to a technique where we allow the wine to age for an extended period of time on the yeast, allowing the wine to retain freshness while continuing to take on the complexity of the yeast. Blanc de Blancs is revered for its ability to age for decades as the finesse of the wines are enhanced with long-term aging.
Our late-disgorged Michel Foch Blancs de Blancs sees 13 years on the yeast, which has allowed it to develop alluring aromas of brioche, toasted almonds as well as a hint of toffee while retaining energy and hints of lime and green apple. The palate is flavorful and long with an elegant minerality and balance as the delicacy of the Chardonnay variety is juxtaposed against the richness derived through extended aging.

Vintage Notes | The 2011 vintage in Champagne was marked by an unusually warm spring followed by a cooler, unsettled summer, leading to an early and selective harvest. While conditions posed challenges, Chardonnay fared best—especially in the Côte des Blancs—producing Blanc de Blancs with lifted aromatics, delicate structure, and fresh acidity. These wines are elegant, nuanced, and best enjoyed for their finesse and early approachability. |
